Falafel is a staple in Middle Eastern cuisine. Made with chickpeas and spices, these deep fried falafel patties have a grainy and crispy texture. Typically served with pita bread, flatbread, hummus, and salad.

Ingredients
  

  • 2 cups dried chickpeas, soaked overnight
  • 1/3 cup chickpea flour
  • 1 medium onion
  • 1 cup fresh parsley
  • 1/2 cup cilantro
  • 8 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • salt to taste
  • oil for frying

Instructions
 

  • Add all ingredients except the oil to a food processor. Pulse until contents form a coarse paste and are mixed well.
  • Empty the mixture into a large bowl. Create patties manually or with a falafel maker using approximately two tablespoons per patty.
  • Heat oil in a pan over medium-high heat. Add falafel patties to the oil and cook each side for 2-3 minutes until golden brown.
  • Serve with pita bread, flatbread, hummus, Tzatziki sauce, and/or tahini sauce. Fill the bread with 4-5 falafel patties, lettuce, tomatoes, onions and drizzle with sauce.
