A Mexican dish with a vegan twist. Primary ingredients include vegan meat substitute, hard taco shells and/or soft tortillas. Supplementary ingredients include onion, lettuce, tomato, avocado, and cilantro. Garnished with lime and served with taco sauce.

Ingredients
  

  • 1 package vegan meat substitute Recommended: Beyond Meat Plant-Based Ground Beef, Impossible Burger Ground Beef, or Beyond Beef Crumbles
  • oil or oil spray in accordance with vegan meat substitute preparation instructions
  • 10 hard taco shells and/or soft tortillas
  • 1 medium onion, finely chopped
  • 1 large tomato, diced
  • 2 cups lettuce, chopped
  • 1 large avocado, sliced
  • 2 tbsp taco seasoning
  • 1/3 cup water
  • 1/4 cup cilantro, chopped
  • 3 limes, quartered
  • taco sauce optional

Instructions
 

  • Preheat oven to 325° F.
  • Heat oil in a pan over medium-high heat and follow directions for cooking vegan meat substitute. Typically involves cooking for 5 minutes.
  • Add taco seasoning and 1/3 cup of water. Mix well and cook for 4 minutes. Stir occasionally.
  • Bake hard taco shells and/or tortillas in the oven for 5 minutes. Flip halfway through to bake evenly.
  • Fill tacos evenly with the vegan meat substitute, lettuce, onions, tomatoes, and a slice of avocado.
  • Top each taco with cilantro and freshly squeezed lime juice.
  • Serve with taco sauce for added spice and flavor (optional).

Notes

There are a multitude of vegan meat substitutes that can be used. These include popular mock meat products (Beyond Meat, Gardein, Impossible Foods, etc.), seitan, jackfruit, and beans.
You can prepare your own taco seasoning at home. Our recipe will be added here in the future.
