Vegan Mac and Cheese
Vegan Mac and Cheese
A creamy, flavorful classic in vegan form! Prepared with homemade, plant-based cheese. Enjoy this guilt-free dish as a centerpiece or as a midnight snack.
Ingredients
- 8 oz elbow macaroni
- 1/2 medium onion, chopped
- 4 cloves garlic
- 1/2 cup carrots, chopped
- 1 small potato, chopped
- 1/4 cup cashews
- 1 1/2 cups water
- 1/2 cup almond milk
- 4 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1 tsp chili flakes
Instructions
- Prepare pasta per package instructions.
- In a separate pot boil 1 1/2 cups of water over medium-high heat.
- Add potatoes, carrots, garlic, and onions. Cook for 15 minutes.
- Remove from heat and drain.
- Add milk, cashews, and boiled vegetables to a blender and puree.
- Add the spices and nutritional yeast to the pureed mixture. Blend until contents are mixed well.
- Pour the cheese (mixture) over the pasta and mix well.
- Serve with salad and/or roasted vegetables.

Appetizing tomato soup! Rich and creamy in texture and easy-to-prepare. This dish is perfect for fall and winter. Serve hot with croutons, your favorite crackers, and/or a plant-based cheese sandwich.
Ingredients
- 4 cups tomatoes, chopped
- 1 medium onion, chopped
- 4 cloves garlic
- 1/3 cup fresh basil, chopped
- 1 tbsp tomato paste
- 2 tbsp olive oil
- 4 cups vegetable broth or water
- salt to taste
- 1 tbsp brown sugar
- 1 tsp black pepper
Instructions
- Heat oil in a pot over medium-high heat.
- Add onion and garlic. Cook for 5 minutes.
- Add tomatoes, salt, pepper, and sugar. Cook for 5 minutes.
- Add broth/water and bring to a boil.
- Turn heat to medium and cook for 15 minutes.
- Remove from heat and puree contents with immersion blender.
- Garnish with basil and serve hot.

Sautéed Garlic Green Beans
These flavorful, garlic-flavored green beans can be the perfect complement to a main dish or can be enjoyed on their own. The recipe is easy to prepare and this dish can be ready in under 30 minutes.
Ingredients
- 1 lb fresh green beans, trimmed
- 8 cloves garlic, minced
- 1 tbsp peanut or sesame oil
- 1 tbsp soy sauce
- 1 tbsp vegan oyster sauce
- 1 tbsp hoisin sauce
Instructions
- Boil water in a large pot over high heat.
- Lower heat to medium-low and add green beans. Cook for 5 minutes.
- Drain and set green beans aside.
- Heat oil in a wok over high heat.
- Add garlic and cook for 2 minutes.
- Add green beans and sauces. Mix well. Cook for 2 minutes.
- Serve hot as a main or side dish.
