- 8 oz elbow macaroni
- 1/2 medium onion, chopped
- 4 cloves garlic
- 1/2 cup carrots, chopped
- 1 small potato, chopped
- 1/4 cup cashews
- 1 1/2 cups water
- 1/2 cup almond milk
- 4 tbsp nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp black pepper
- 1 tsp chili flakes
Prepare pasta per package instructions.
In a separate pot boil 1 1/2 cups of water over medium-high heat.
Add potatoes, carrots, garlic, and onions. Cook for 15 minutes.
Remove from heat and drain.
Add milk, cashews, and boiled vegetables to a blender and puree.
Add the spices and nutritional yeast to the pureed mixture. Blend until contents are mixed well.
Pour the cheese (mixture) over the pasta and mix well.
Serve with salad and/or roasted vegetables.
