Roasted Garlic Mashed Potatoes
Vegan take on classic mashed potatoes with a garlicky twist! Serve this holiday favorite along with gravy and/or biscuits.
Ingredients
- 8 large potatoes
- 10 cloves garlic, chopped
- 1/2 cup scallions, chopped
- 1/2 cup almond milk
- cooking oil spray
- 1/4 cup vegan butter
- 1 tsp ground black pepper
- 1 tsp thyme
- salt to taste
Instructions
- Fill a large pot with water and bring to a boil. Add potatoes and cook until tender (approximately 20-25 minutes). Peel and set aside.
- Preheat oven to 325°F. Place garlic in a single layer on a baking sheet and coat with cooking oil spray. Bake until garlic turns golden brown (approximately 10-15 minutes).
- In a large bowl combine the peeled potatoes, butter, and milk. Mash contents to desired consistency.
- Add roasted garlic, black pepper, thyme, and salt. Mix well.
- Garnish with scallions and serve hot with gravy and/or biscuits.
