Vegan Mushroom Soup
This aromatic soup is the perfect comfort dish and can be ready in 30 minutes.
Equipment
- 1 pot
- 1 blender
- 1 spatula
Ingredients
- 8 oz mushrooms
- 6 cloves garlic
- 1 medium onion
- 1 tbsp vegan butter
- 1/2 cup cashews
- 1 tbsp apple cider vinegar
- 2 cups vegetable broth
- 1/2 cup water
Spices and herbs
- 1 tsp garlic salt
- 1/2 tsp pink Himalayan salt
- 1 tsp black pepper
- 1 tbsp parsley
Instructions
- Blend apple cider vinegar, water, cashews, garlic salt, pink Himalayan salt, and parsley until the texture is smooth and creamy.
- Melt butter in pot over medium heat.
- Add mushrooms, garlic, and onion. Cook for 10 minutes with lid on until contents are tender. Stir a couple times to prevent sticking.
- Add vegetable broth and cook for an additional 5 minutes with lid on.
- Add mixture from step 1 and black pepper. Stir well and simmer at low heat for 2 minutes.
- Serve hot with bread or crackers.
