Vegan take on classic mashed potatoes with a garlicky twist! Serve this holiday favorite along with gravy and/or biscuits.

Ingredients
  

  • 8 large potatoes
  • 10 cloves garlic, chopped
  • 1/2 cup scallions, chopped
  • 1/2 cup almond milk
  • cooking oil spray
  • 1/4 cup vegan butter
  • 1 tsp ground black pepper
  • 1 tsp thyme
  • salt to taste

Instructions
 

  • Fill a large pot with water and bring to a boil. Add potatoes and cook until tender (approximately 20-25 minutes). Peel and set aside.
  • Preheat oven to 325°F. Place garlic in a single layer on a baking sheet and coat with cooking oil spray. Bake until garlic turns golden brown (approximately 10-15 minutes).
  • In a large bowl combine the peeled potatoes, butter, and milk. Mash contents to desired consistency.
  • Add roasted garlic, black pepper, thyme, and salt. Mix well.
  • Garnish with scallions and serve hot with gravy and/or biscuits.

  • 2 cups ginger and lemonade-flavored Kombucha
  • 2 cups sparkling water
  • 2 cups Sprite

  • 6 wheels lime

Instructions
 

  • Combine Kombucha, sparkling water, and Sprite in a pitcher. Mix well.
  • Top with mint leaves and ice cubes.
  • Garnish with lime wheels.

  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1/2 tsp black pepper
  • salt to taste

Instructions
 

  • Preheat oven to 425° F.
  • Mix asparagus, garlic, oil, black pepper, and salt in a bowl.
  • Place asparagus in a single layer on a baking sheet.
  • Bake for 15-20 minutes until tender.

Notes

Sprinkle lemon juice over the asparagus stalks after baking for a zesty finish.
