Ingredients
  

  • 8 oz elbow macaroni
  • 1/2 medium onion, chopped
  • 4 cloves garlic
  • 1/2 cup carrots, chopped
  • 1 small potato, chopped
  • 1/4 cup cashews
  • 1 1/2 cups water
  • 1/2 cup almond milk
  • 4 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp chili flakes

Instructions
 

  • Prepare pasta per package instructions.
  • In a separate pot boil 1 1/2 cups of water over medium-high heat.
  • Add potatoes, carrots, garlic, and onions. Cook for 15 minutes.
  • Remove from heat and drain.
  • Add milk, cashews, and boiled vegetables to a blender and puree.
  • Add the spices and nutritional yeast to the pureed mixture. Blend until contents are mixed well.
  • Pour the cheese (mixture) over the pasta and mix well.
  • Serve with salad and/or roasted vegetables.
