Ingredients
  

  • 8 oz mushrooms
  • 6 cloves garlic
  • 1 medium onion
  • 1 tbsp vegan butter
  • 1/2 cup cashews
  • 1 tbsp apple cider vinegar
  • 2 cups vegetable broth
  • 1/2 cup water

Spices and herbs

  • 1 tsp garlic salt
  • 1/2 tsp pink Himalayan salt
  • 1 tsp black pepper
  • 1 tbsp parsley

Instructions
 

  • Blend apple cider vinegar, water, cashews, garlic salt, pink Himalayan salt, and parsley until the texture is smooth and creamy.
  • Melt butter in pot over medium heat.
  • Add mushrooms, garlic, and onion. Cook for 10 minutes with lid on until contents are tender. Stir a couple times to prevent sticking.
  • Add vegetable broth and cook for an additional 5 minutes with lid on.
  • Add mixture from step 1 and black pepper. Stir well and simmer at low heat for 2 minutes.
  • Serve hot with bread or crackers.
