Vegan Pasta Salad
A fresh, savory pasta salad. Can be enjoyed at any time as a main or side dish, hot or cold. Endless variations of this dish can be created from a combination of different vegetables and salad dressings.
Ingredients
- 8 oz rotini pasta
- 2 tbsp vegan salad dressing
- 1/2 cup black olives, sliced
- 1 cup cherry tomatoes, halved
- 1/2 medium onion, chopped
- 1 large bell pepper, chopped
- 1/2 cup fresh parsley, chopped
- 1 tsp black pepper
- 1 tsp garlic powder
- salt to taste
Instructions
- Cook pasta per package instructions (typically 7-10 minutes).
- Drain pasta, rinse under cold water, and set aside.
- In a large bowl add olives, tomatoes, onions, parsley, bell peppers, black pepper, garlic powder, and salt.
- Add pasta and dressing. Mix well and serve.
Notes
Possible dressings include ranch, caesar, honey mustard, or vinaigrette.
Substitute parsley with basil for a sweeter and more aromatic salad.
