Ingredients
  

  • 8 oz rotini pasta
  • 2 tbsp vegan salad dressing
  • 1/2 cup black olives, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 medium onion, chopped
  • 1 large bell pepper, chopped
  • 1/2 cup fresh parsley, chopped
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • salt to taste

Instructions
 

  • Cook pasta per package instructions (typically 7-10 minutes).
  • Drain pasta, rinse under cold water, and set aside.
  • In a large bowl add olives, tomatoes, onions, parsley, bell peppers, black pepper, garlic powder, and salt.
  • Add pasta and dressing. Mix well and serve.

Notes

Possible dressings include ranch, caesar, honey mustard, or vinaigrette.
Substitute parsley with basil for a sweeter and more aromatic salad.
