Vegan Pasta Salad

A fresh, savory pasta salad. Can be enjoyed at any time as a main or side dish, hot or cold. Endless variations of this dish can be created from a combination of different vegetables and salad dressings.

- 8 oz rotini pasta
- 2 tbsp vegan salad dressing
- 1/2 cup black olives, sliced
- 1 cup cherry tomatoes, halved
- 1/2 medium onion, chopped
- 1 large bell pepper, chopped
- 1/2 cup fresh parsley, chopped
- 1 tsp black pepper
- 1 tsp garlic powder
- salt to taste
Cook pasta per package instructions (typically 7-10 minutes).
Drain pasta, rinse under cold water, and set aside.
In a large bowl add olives, tomatoes, onions, parsley, bell peppers, black pepper, garlic powder, and salt.
Add pasta and dressing. Mix well and serve.
Possible dressings include ranch, caesar, honey mustard, or vinaigrette.
Substitute parsley with basil for a sweeter and more aromatic salad.
